
Shakshuka
Tasty Middle Eastern poached eggs in spiced tomato sauce.
Ingredients
- 2 tbspolive oil
- 1onion, diced
- 1garlic clove, minced
- 1 tspground cumin
- 4fresh tomatoes, diced
- 1 tbsptomato paste
- 1red pepper, sliced
- 1 pinchsalt
- 1black pepper, to taste
- 1sweet red pepper powder
- 1chilli, to taste
- 4eggs
Instructions
Sauté the onion, garlic in oil over medium heat.
Add cumin and chilli, stir for 30 seconds, then pour in the peeled and chopped tomatoes.
Simmer until thick. Add other spices like sweet red pepper, black pepper and salt.
Add chopped red pepper and cooked for little longer.
When the sauce is ready, make four wells, crack in the eggs, cover, and cook until the whites set.
Best served with bread and olive oil.
