Peanut Butter Tomato Sauce

A rich, savory-sweet sauce with a peanut butter base, perfect served over roasted veggies or tofu.

Ingredients

  • 2 tbspolive oil
  • 2fresh tomatoes
  • ½onion, diced
  • 1garlic clove, diced
  • 1 tbsptomato paste
  • 2 tbspcrunchy peanut butter
  • 2 tbspsoy sauce
  • 1 tbspmaple syrup
  • 1 pinchsalt
  • 1black pepper, to taste
  • 1sweet red pepper powder
  • 1chilli, to taste
  • 1 tbspfresh lemon juice
  • 1 tbspwater, to thin

Instructions

  1. Sauté the aromatics: Heat a splash of oil in a pan and stir-fry the chopped onion and garlic clove until fragrant and lightly softened.

  2. Add the peeled and chopped tomatoes to the pan. Cover with a lid and cook gently until the tomatoes have broken down and softened.

  3. Stir in the tomato paste, crunchy peanut butter, soy sauce, maple syrup, salt, black pepper, sweet red pepper powder and chilli, to taste, and fresh lemon juice. Mix thoroughly until the peanut butter has fully dissolved into the sauce.

  4. Add a little bit of water, to thin (a splash at a time) until the sauce reaches your desired consistency.
