Black Bean Burger

Hearty patties of black beans, mushrooms, oats and walnuts, with a savoury hit of miso.

  • 3 tbspflax seeds
  • 250 gblack beans, cooked
  • 70 goat flakes
  • 1 tspdark miso paste
  • 1 tspthyme
  • 1 tspcumin
  • 150 gmushrooms
  • 4 tbspolive oil
  • ½ tspsalt
  • ½red onion
  • 40 gwalnuts
  • 3 tbspwater

Instructions

  1. Let the flax seeds soak in 3 tbsp of water for 10 minutes.

  2. Finely purée ⅔ of the beans together with the oat flakes, miso paste, thyme and cumin in a food processor.

  3. Chop the mushrooms finely. Add 1 tbsp of the oil to a hot pan and fry the mushrooms over medium-high heat for 6 minutes. Season with ½ tsp salt.

  4. Grate the onion and squeeze it well.

  5. Add the fried mushrooms, grated onion, remaining beans, flax seeds and walnuts to the patty mixture. Briefly chop with the pulse function of the food processor and fold in.

  6. Form four patties and set aside until ready to fry.

  7. Add the remaining oil to a hot pan and fry the patties over medium-high heat for 5 minutes per side.
